(NewsNibs) - Pavel Pavlov’s gourmet chocolate brand La Fève is turning heads in Sofia, Bulgaria, demonstrating that top-tier, innovative chocolate bonbons are not exclusive to the well-known Western European chocolatiers. Igniting local taste buds and challenging conventional chocolate crafting wisdom, La Fève originated in Norway, where Pavlov had ambitions to establish a confectionery chain. The pandemic, however, prompted his return to Bulgaria, where together with Daria Rusanova, they launched their vision in Ovcha Kupel, Sofia, offering 24 unique flavors of bonbons. Despite prices deemed high by Bulgarian standards, the producer is inundated with orders, suggesting a local shift towards quality over quantity.
Corporate Demand Reshapes Production Goals
Initially focused on online sales and retail franchise principles, the brand encountered unanticipated demand from corporate clients, which led to a strategic shift. Efforts were concentrated on satisfying these larger orders, while never compromising on the exquisite quality they stood for. Originally targeting a monthly output of 5,000 to 7,000 bonbons, the company swiftly ramped up production to 20,000 to 25,000 per week due to soaring demand within the first year. To manage increasing orders, reaching up to 2 tons of bonbons, the team expanded to 11 dedicated individuals. Defying expectations, La Fève politely refused requests to modify their iconic logo on the orders, underscoring their commitment to brand integrity and quality assurance.
Recognition and Forward-Looking Innovation
La Fève is gaining notoriety not just for their exquisite flavors but also for their inventive approach, offering unique tastes like bacon and sour milk. Recognition for their chocolates has already transcended Bulgarian borders. The company prides itself on its strict quality control and sources its ingredients internationally, barring their locally grown strawberries, to meet their exacting standards; packaging materials are procured from multiple suppliers in Sofia to reach desired quality levels. The firm promotes a non-hierarchical, familial work environment which has resulted in zero staff turnover.
While La Fève is presently content with its attainments in balancing quality and production volume, they are open to international market opportunities. Summer is a period for planning and product development, and September traditionally heralds the launch of new flavors. A stable selection of 24 flavors is maintained annually, with some being rotated for novelty. Future projections for 2024 include the roll out of "on the go" tubular packages of bonbons, as La Fève continues to prioritize product excellence over profit, cautiously considering production expansion, provided that their high standards of quality remain uncompromised.
